Mother's Day Luscious Lemony Treat

lemon loaf cake

Ingredients:

For the Lemon Loaf
1 cup (2 sticks) unsalted butter, at room temperature
3 cups all-purpose flour
3/4 cup low-fat buttermilk
Lemon Zest, 2 lemons grated
1/3 cup fresh lemon juice
1 1/2 teaspoons salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 cups sugar
5 large eggs

For the Lemon Glaze
2 cups confectioners' sugar
3 tablespoons of fresh lemon juice


Preheat the oven to 350 degrees Fahrenheit/180 degrees Celsius. With a bit of extra butter and flour, butter and flour two 5-by-9-inch loaf pans (you can also make this recipe in one Bundt pan).

In a small bowl, whisk together buttermilk with lemon zest and lemon juice. Then, in a medium bowl, whisk together flour, salt, baking powder, and baking soda. Set both bowls aside.

With an electric mixer, cream butter and sugar until light and fluffy. While the electric mixer is on low, carefully add one egg at a time.  

Continuing with the mixer on low, add half the flour mixture, then add half the buttermilk mixture. Repeat with adding the remaining flour mixture followed by the buttermilk mixture. Beat until smooth, careful not to over mix.

If you are using the loaf pans, divide batter evenly between the pans. Make sure that the top of the batter is smooth. Bake for about 50 to 60 minutes. Check the cakes at 50 minutes using a toothpick, if the toothpick come out of the cake clean, they are done. Take the pans out of the oven and cool in the pans for 10 minutes. Take the cakes out of the pan and cool completely on a rack before glazing. 

To make the glaze, use a baking sheet with a cooling rack set on top. Place the cakes on the cooling racks and pour the glaze over the cakes. Let dry for 30 minutes.
